Fish Taco's.

1 pound mahi-mahi
4 tablespoons olive oil
Juice of 1 lime
1 tablespoon chili powder
1 teaspoon salt
½ teaspoon garlic powder (I used fresh garlic and more if it!)
½ teaspoon black pepper
Corn tortillas
Shredded cabbage
Black beans, salsa

In a medium bowl combine fish, 2 tablespoons of olive oil, lime juice, chili powder, salt, garlic, and pepper.  Let stand for 15 minutes.

Heat 2 tablespoons olive oil in a nonstick skillet over medium heat.  Add fish and marinade from bowl.  Cook fish about 4-5 minutes, stirring once or twice to ensure the fish is fully cooked.  Shred into small bit size pieces.

Place corn tortillas between tow damp paper towels and microwave for 30 seconds.
Assemble tacos by placing fish on top of tortillas, topping with salsa, black beans, and cabbage.

  1. Is there such a thing as fish tacos without Baja sauce? can't live without the baja sauce.

  2. Love the Baja sauce. We actually ate these taco's with Joel's salsa, yummy.

The recipe actually had a Chipotle sauce to go with them - I am not a huge fish taco/chipotle fan. I made it anyway but threw it out because it was yuck!
