We want to know what infant car seat you recommend or don't recommend With all the options out there - we don't know where to start. (I even want to hear from you blog stockers that read!)
The only advice I can give you is what other people have said. I know a lot of people like the kind that detatch from the base and you can set them in your stroller. Just because you never have to un-buckle or re-buckle the car seat it. And if your baby is sleeping you don't have to take them out. I don't know that safety ratings though. Good luck. When I researched with Cole, the one you pictured above- the Peg Perego Primo Viaggio was the safest + most quality option. It's held up really really well for us and I like that they offer good looking (color wise) options. The base is really heavy, but like the other comment mentioned, you can simply leave the base strapped into your car and then just click the seat in every time you go somewhere. Of course that carseat also works with the Peg Perego strollers to create a complete travel system: simply snapping your carseat into your stroller as well in order to not have to unstrap baby from the seat and into a separate stroller. We've been happy.
Make sure it's easy to adjust the strap. Our first carseat was so hard to adjust with the baby in the seat which made it super hard when our baby was wearing a coat.
We've been really happy with the Graco Metrolite travel system. We're still using the stroller and the carseat/carrier is still in good shape if we ever need it again. And the stroller compacts easily.
Like Kelli said the Peg Perego has held up beautifully (through both girls) and it does have the best safety rating, and the convenience of fitting into the Peg Perego stroller (the BEST strollers out there, 9 lbs, who can beat that??)--I have been disappointed in the comfort for the baby. The carseat really sits the infant nearly straight up.
I would have preferred a seat that cradled the baby more, but perhaps that would have compromised safety? I am not sure.
If you decide on the Peg or are just not sure by the time little Simons comes you are welcome to have ours.
I love ours! We have the Peg Perego! And like Tara said who can beat a 9lb stroller to go with it!!! Lincoln seems to really like his seat...or at least he doesn't really get mad when we put him in it like some kids do! Good luck, it is a had decision to make with so many options out there!!! We can't wait to meet the little guy!!!
Car seats can be expensive, but they're the kind of thing where you want to get the second-cheapest one, not the cheapest one. Remember that your baby is going to drool, spill, urinate, poop, and thow up all over this car seat, so don't pay tons of money for anything you don't want to see that happen to. We started out with a simple carrier that clicks in and out of a base that stays mounted in the car. After a few months we graduated to a regular car seat. Best of luck!

For what it's worth, I love our peg perego infant seat and stroller. They have been wonderful. Then we move the kiddos on up to the Britax marathon. We're not sure where to go from here, (considering the britax frontier), but these were recommended to us, and we've been very satisfied.
If you're planning on having them quick, we these crazies, I would recommend planning on spending for a high quality (and brand new), so that they don't go out of date (or recalled) before #2 or #3. What ever you choose, I'm just so happy for you! :)laya!
I bought a graco brand when we bought ours....it was a midline car seat. I've been totally happy with it. If you go to babies r us, they do have a few people on staff who really know a lot about the brands, etc. you could try talking to them....good luck
