johnny lingo.

 For mutual we have been working with the young men to make a picture movie of Johnny Lingo - but with a  western Midway touch.  Today the kids met to act out the movie while we took over 600 pictures of them.  The YM are making it into a picture slide show that will be a movie when we watch it.

byu.


We went to a BYU | U of U party tonight.  Our friends that hosted the party are huge 'U' fans.  I think most couples there were BYU fans with a few divided couples.  I won the bottle of blue and red M&M's for guessing how many where inside.  Yahoo! 


Each couple brought something to eat that represents their team.  I made these blue cupcakes with edible "Y's" on top.  
The center cupcake had two "Y's" beating up on the "U" player...he, he, he.

cascade springs.

We went on our annual trip to Cascade springs today with the Hopkinsons.  This is such a kid friendly place to "hike"

soccer.

Today Park City High School played Wasatch High School in girls soccer.  No big deal, right?!  I am a PCHS alumni and my young woman go to WHS; the two are bitter rivals.  The game was being played in Park City right behind my parents house so we all walked down to watch.  The girls are always giving me a hard time about going to PCHS - they keep telling me they are going to buy me some Wasatch High School gear to wear instead of my PCHS t-shirts.
I won't mention the score of the game...

Fish Taco's.

1 pound mahi-mahi
4 tablespoons olive oil
Juice of 1 lime
1 tablespoon chili powder
1 teaspoon salt
½ teaspoon garlic powder (I used fresh garlic and more if it!)
½ teaspoon black pepper
Corn tortillas
Shredded cabbage
Black beans, salsa

In a medium bowl combine fish, 2 tablespoons of olive oil, lime juice, chili powder, salt, garlic, and pepper.  Let stand for 15 minutes.

Heat 2 tablespoons olive oil in a nonstick skillet over medium heat.  Add fish and marinade from bowl.  Cook fish about 4-5 minutes, stirring once or twice to ensure the fish is fully cooked.  Shred into small bit size pieces.

Place corn tortillas between tow damp paper towels and microwave for 30 seconds.
Assemble tacos by placing fish on top of tortillas, topping with salsa, black beans, and cabbage.




zucchini, banana, flaxseed muffins.

 1 ¾ cups flour
½ cup ground flaxseed
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
1 ½ cups grated zucchini
¾ cup milk
1 large egg
1 teaspoon vanilla
2 mashed up ripe bananas.

Preheat oven to 350 degrees.  Lightly coast 12 standard muffin cups with cooking spray.  In a large bowl, whisk together flour, flaxseed, brown sugar, baking soda, baking powder, salt and cinnamon.  Add zucchini and banana and stir to combine.  In a small bowl, whisk together milk, egg, and vanilla.  Add milk mixture to flour mixture and stir until combined.

Divine batter among muffin cups.  Bake until a toothpick inserted in center comes out clean, 20 to 25 minutes.  Let muffins cool completely in pan on a wire rack, about 30 minutes.

I made these Fish Taco's for Sunday dinner - so good.
I also made a batch of these Zucchini, banana, flaxseed muffins for the week.

Peaches and blackberries are in season and I have had lots of request for THIS recipe again.  I think I have made this pie 5 times in the last few weeks!

6 months.


Bodie had his 6 month check up today.  He weighs 12 pounds 14 ounces and is 24 1/2 inches long.  The exact same weight as Truman at this age {pictures here of Truman at 6 months and here is a picture of Gregg at 6 months}.  He only gained 14 ounces since his last check up two months ago.  Time to fatten this kid up!  He eats well, sleeps well {12 hours last night for him and Truman}, poops regularly - can't complain.  The only thing he is not really consistent with are his naps; unlike Truman who napped like clockwork.  

Truman is rediscovering apple sauce now that I have been feeding it to Bodie.

value painting.

 Tonight for mutual we had a paint fight with the Young Woman value colors.  We read a scripture and the girls had to guess what value the scripture was about - the girl who got it correct painted the other girls in that value color {i.e. faith is white}.  It was a blast - we all laughed really hard!
