Thai Chicken
This is a good recipe! I highly recommend it especially if you like Thai food!

Thai Chicken
- 8 flour tortillas
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1 tablespoons canola oil
- 1/2 sweet onion, chopped
- 1/3 cup chopped/shredded carrots (I use closer to ½ cup)
- 1/2 cup chopped/shredded cabbage (I use a full cup)
- 1/2 cup chopped red peppers
- 4 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 green onions, sliced
- 1/3 cup chopped + crushed peanuts + more for garnish
- 1/4 cup chopped fresh cilantro + more for garnish
- 2 1/2 cups light coconut milk
- 1/3 cup + 1/2 cup sweet chili sauce
Preheat oven to 350 degrees F.
Heat a large skillet over medium heat and add canola oil. Throw in onions, cabbage, red peppers, carrots, garlic and 1/4 teaspoon salt, stirring to mix. Let cool until vegetables are soft, about 6-8 minutes, stirring occasionally. Add in chicken, green onions, peanuts, cilantro, remaining salt and pepper, tossing to coat, and let cook for 1-2 minutes. Add in 3/4 cup coconut milk and 1/3 cup sweet chili sauce, mixing thoroughly to combine. Turn off heat.
Spray a 9×13 baking dish with nonstick spray. Whisk together remaining coconut milk and sweet chili sauce. Pour about 1/2 a cup or so on the bottom of the dish. Slightly warm tortillas if desired to make them more pliable, then place a few spoonfuls of the chicken mixture in each, rolling up tightly and placing in the dish. Cover with remaining coconut milk and chili sauce mix. I usually take a spoon and cover every inch of the tortilla with the sauce, just to make sure it's coated.
Bake for 20 minutes, then remove and top with additional peanuts and cilantro. Since sauce is not as thick as traditional enchilada sauce, when you remove them from the oven, spoon sauce from the bottom of the dish all over the tortillas. Serve with rice.

Studio 5.
Today my mother-in-law and I went to a live recording of Studio 5 -
a local life-style TV show.
It was a lot of fun.
It was fun to be behind the scene and see the cameras, lights and producers. I was so nervous for the guests and hosts because it is live TV - I could never do something like that.
You can see Lynn in the blue right in the middle of the picture and me on her right in yellow.

Apparently there was a presidential interruption during the first 30 minutes of the show so they are going to re-broadcast our show on Monday June 3rd.

One of the guest was Becky Higgins who is the creator of Project Life and it just so happened that my 'winter project' this year was doing Truman and Bodie's baby books and scrapbooks with Project Life, so I was so happy that she happened to be on the show today. I worked ALL winter on baby books and scrapbooks and will do a post dedicated to them soon.
So after the show I was a complete nerd and went up to introduce myself and meet her.
She was incredible sweet - I love her product even more because of that! How nerdy am !?! She asked detailed questions about the books I had done for my boys, what products I had used and how must 'creative liberty' I had used. It was very thoughtful and kind and I am even more of a fan now!
Meet-and-greet after. They had every single person come up and take their picture with the hosts, I think Lynn and I felt kind of cheesy!
After the show there was a quick questions and answer session and then it was off to the studio for a catered lunch. So sweet of them to do all of this for a live studio audience {which they only have about two times a year}.
As we left the studio they gave us swag bags full of gifts and coupons.

Stella's surprise
Our little niece Stella turned 5 today.
We had a little surprise birthday party at the park for her {because that is what she wanted}!
Bodie had a chocolate pop-sickle {all over his shirt and pants} and a cupcake for dinner, yum!
Truman and Bodie loved feeding the ducks - first time this year.
It was serious business.

Wonder.
I finished reading the book Wonder today.
It was recommend to me by a girlfriend from High School; I read it between reading book club books. I really liked it - it made me consider the way I think. I want to try and be more open minded about those around me. Easy, quick read, I highly recommend it.
I want to start reading chapter books to Truman at night - my sister recommend we start with Mr. Popper's Penguins. We stopped by the library and checked it out. I will do a review when we finish!

Mother's Day.
Happy Mother's Day 2013.
Me, my mom, and my sister.
We all attended church in Park City with my parents then we partied all afternoon at our house.
My high school friend Tessa and new husband {she just got married} joined the party - it was a blast - Tessa was basically a member of our family growing up. And Dallins girlfriend Becca just got back from her Mission {to Taiwan, same mission as Tessa ironically} so it was so fun to be with her again.
Everyone helping out with the rolls, it turned into a little competition for the best looking twirl-roll.
This was my dad all weekend, jet lag!
To give some perspective you can see he was asleep in the middle of the great room with lots of stuff going on all around.
{The mattress was up because some some of my brothers had spent the night. I wondered out of my room early Sunday morning - barley dressed - and there they were sleeping in the great room - I had no idea they had even come during the night - typical}
BYU Bookstore fudge from Becca to all the moms! We hid it and didn't really share :)
We made this amazing lemon cake for my mom - I will share the recipe below.
After dinner we all sat around and watched a slide show of pictures from my parents and McKays recent trip to New Zealand, Australia and Fiji.
