Salad with Pistachio-Crusted Goat Cheese.

Salad with Pistachio-crusted goat cheese

6 cups torn mixed salad greens
2 medium oranges, peeled
1 cup cherry tomatoes
¼ medium red onion, thinly sliced

2 tablespoons orange juice
1 tablespoon white wine vinegar
1 teaspoon grated orange peel
1 teaspoon honey
½ teaspoon salt
¼ teaspoon ground cumin

6 tablespoons olive oil
1/3 cup pistachios
4 ½ teaspoons seasoned bread crumbs
1 log (4 ounces) fresh goat cheese

In a large bowl, combine the first four ingredients.  In a small bowl, whisk the orange juice, vinegar, orange peel, honey, salt, cumin and 5 tablespoons oil.  Pour over salad; toss to coat.  Divide among four serving plates.

Place pistachios in a food processor; cover and process until ground.  Transfer to a small bowl; stir in bread crumbs.  Cut goat cheese into four slices; coat in crumb mixture.

In a small nonstick skillet coated with cooking spray, cook cheese slices over medium heat for 1-2 minutes on each side or until golden brown.  Place on salads.

Gooey Butterscotch Bars.


Gooey Butterscotch Bars

1 package (17 ½ ounces) sugar cookie mix
1 package (3.4 ounces) instant butterscotch pudding mix
½ cup butter, softened
1 egg
1 package (14 ounces) caramels
½ cup evaporated milk
2 cups mixed nuts
1 teaspoon vanilla extract
1 cup butterscotch chips

In a large bowl, combined the sugar cookie mix, pudding mix, butter and egg.  Press into an ungreased 13 inch baking pan.  Bake for 350 degrees for 20-25 minutes or until set.

In a large saucepan, combine caramels and milk.  Cook and stir over medium-low heat until melted.  Remove from the heat.  Stir in nuts and vanilla.  Pour over crust.  Sprinkle with butterscotch chips.  Cool completely.  Cut into bars.

Caucus.

 Tonight we hired a babysitter {one of my adorable YW} and went out on a hot date to the Utah GOP caucus.  A couple of weeks ago in church, over the pulpit, a letter was read from the First Presidency of the LDS church asking members to support their local caucus.  The church committed to support the caucus by not holding any church related meetings or activities.  It was definitely an interesting experience, I feel like a real American!!!  I have always voted but I have never gotten involved this early in the voting process by supporting my local caucus.  
Today Bodie and I were running some errands when I looked back and saw him 'reading' a book.  So cute!  Truman had a favorite ABC book at this age - he would always turn to the page with balls on it.
Bodie sat like this for almost 20 minutes looking at his book.

Shower Time.

A girlfriend of mine expecting her fifth baby and first girl - perfect excuse for a baby shower.  She has been on bed rest for weeks so it was a treat for all of us to get to see her.

Below is my sister-in-laws recipe for the Mexican Quiche that I served.

Mexican Quiche.

Mexican Quiche

5 eggs
¼ cups flour
½ teaspoon baking powder
¼ cup butter, melted
1 (7 oz.) can driced green chilies
1 cup cottage cheese
¼ cup chopped onion
1 tablespoon butter
1 cup shredded Monterey Jack cheese

Beat eggs lightly in large bowl.  Stir in flour and baking powder.  Add the ¼ cup melted butter, chilies, and cottage cheese.   Sauté onion in the 1 tablespoon butter; add to mixture, along with cheese.

Combine just until blended.  Pour mixtures into a greased 9x9 –inch baking dish or pie plate and bake at 400 degrees for 15 minutes.  Reduce heat to 350 degrees and continue baking about 30 minutes.

Cut into small squares or wedges and serve hot.  Makes 6 servings.

Hamburgers.



We met up with the Hopkinsons cousins today for a fun outing.  It stared in Heber at the Dairy Keen for hamburgers and fries.

Next we tried out the new Kohler Dairy in Midway.  Amazing!  I think it rivals Reed's Dairy in Idaho Falls {sorry all you Idaho fans...}


We drove over to my parents new property in Midway.  They bought 3 acres by Solider Hollow for a future house.  Before heading home for naps we made one last stop at the Midway Corner Bakery for cupcakes.  Yep, hamburgers, fries, chocolate milk, ice-cream and cupcakes for lunch!

Volleyball.


Tonight we went down to Provo to cheer on the BYU men's volleyball team.

It has been  really fun supporting Chris and his team this season.  Volleyball games are high paced and thrilling to watch.  Truman likes the chance to hangout with cousins and see the "big boys" play ball.
