Las Vegas


Friday Nate, McKay, my mom, Truman and I headed down to Las Vegas to meet up with my dad, Anthony, Sharon and Ira.  My dad had been at a convention all week and Ant and Sharon flew in from Connecticut.  We spent the weekend chillin' before hiking Havasupai.
McKay does not go anywhere without his slack line - they are teaching Truman how to slack line at a young age!!
We discovered that shuffle board isn't only for old people!  We had so much fun playing all Sunday afternoon.

I got a new lens for my camera today!  I played around with it tonight at a Red Ledges BBQ and whiffle ball outing.  Truman was in heaven emptying out this large bucket of golf balls.  The boy always has a ball in his hand.

My girfriend asked me to take some photos of her nephew {remember this cute baby girl, Luke is her cousin - they will have fun together when they are older}. I wish I was more consistent in the quality of my photos.  Unfortualty his older sister scratched his face the day before I took pictures.  Time for me to lean how to use my Photoshop!

stuffed peppers.

I made these yummy stuffed peppers today.


Stuffed Peppers
4 large bell peppers
3/4 ground hamburger or turkey
1/2 pound ground pork (optional)
1 medium onion, chopped
2 garlic cloves, minced
1 cup cooked rice, we like Jasmine rice
1/2 cup jarred cheese and salsa (like a Tostitos brand)
1/2 cup sour cream
1 cup diced tomatoes (canned work)
1/2 cup chopped green onions
1 tablespoon soy sauce
salt and pepper

Preheat oven to 350 degrees.
Cut the tops off the peppers and remove the seeds and ribs inside.

Using a hot skillet, sauté the ground beef, pork, garlic, onion and seasonings.  Drain the fat off.  Add the cooked rice, cheese, sour cream, tomatoes, green onions and soy sauce.  Mix well and stuff the mixture into the peppers.  Place the stuffed peppers in the dish, cover with foil and bake for 25-30 minutes.  Remove the foil and bake an additional 10-15 minutes.

Here is another yummy idea is you have extra bell peppers lying around.  I sliced the peppers into thin slices and then cooked our eggs in them for breakfast.  It gave the eggs a good flavor.

the face of sickness.

Tonight I took Truman to the doctor after 24 hours of him being miserable.  You feel so bad when you can tell they don't feel well but you have no idea what is wrong.  Then you worry the doctor is going to look at you like you are a fool and tell you nothing is wrong with your child.  Then what?

After deliberating with my "free" doctor {my older wiser sister who has 4 kids} a million different times today I finally decided to just take him in.

We have our first ear infection and, just like me, Truman does not do pain!
{not to mention a cold, nasty cough, and THREE one year molars coming in all at the same time}

He was doing this all afternoon.
He learned this week that cupboards open and that there is fun stuff inside to pull out.
This is what our room looked like tonight.  Nate {our second son for the summer} chilling in our bed eating ice cream and watching the Lakers game with Truman and Gregg.

memorial weekend.

We went to Idaho this weekend to meet this cute guy, Crew.
I love his face in this picture.  He looks like he is so mad at me for taking his picture.

My mom bought some new summer dresses for Truman's cousin Jean.  I told her Truman needed some summer clothes.  Next thing I knew she had changed Truman into this dress without anyone noticing.

My uncle Joel grilled hamburger in the rain and made Grandma Vira baked bean in the garage for our celebration.  
Because of all the rain we had an indoor BBQ and lots of indoor games.

On Sunday the sun came out for a minute so we all headed out on a walk.  Afterward Joel got out his dirt bike for McKay to ride.  Joel tried to ride McKay's fixy bike.

On Monday morning my mom, McKay and I rode our bikes from my grandparents {Araves} to my other grandparents {Quinns} and then through the long rolling Idaho farm roads to Trent's house.  I wish I had my camera because the fields were so pretty.  Maybe next time.
