Conference Weekend Part I.

We had a fun, relaxing, playful weekend in Park City with family for Conference.  What great talks!  I feel inspired to be better!
 After Conference the kids went out to play in the sand box - it was freezing cold but they still insisted on turning on the hose.  I think half the fun for the kids was the fact that all the parents {and grandparents  were standing around watching them play.

 Believe it or not those clothes came out of the wash perfectly clean after this play session in the sandbox with the water.



 Tiffany found this 'Conference Board' on Pinterest and made it for the weekend.  It was really cute and now I want one for my family.

Hee Haw Farms.


Today we went on a field trip to Hee Haw Farms with Truman's Preschool class.  What a cute place -we had a blast.

First we went to the petting part of the farm.  Truman was a little timid with the animals,  Bodie wasn't - he was chasing the animals in circles.
Dallin and Jean came with us.  Thanks for the help Dallin.
Next it was off to this huge plastic slide.  The kids sat on gunny sacks and flew down it - I couldn't believe Truman would do it by himself.

Last it was off to the pumpkin patch to pick a pumpkin {so cute}.  Truman was mesmerized by all the pumpkins growing in the field.

All good things must come to an end.  Somewhere in the corn maze we got a flat tire on the stroller - first flat tire ever on the stroller- kind of amazing considering the place its been!

Volleyball and McKay.

We just finished "babysitting" McKay for a week while my parents took their parents to Branson Missouri to do the 'old folks' thing.

It's Homecoming week at PCHS so Monday night for Family Night we went and watched the senior boys {McKay and friends} play the junior boys.  Before the game I fed some of his friends at the house {homemade Pesto Pasta, so good} then it was off toPCHS for the game - it was really fun to watch.  McKay's got some skills!

 Fresh from the bath and in their pajama's, then off to the high school to watch the game {with volleyballs in hand of course}!

Classic Pesto Pasta.



Classic Basil Pesto
Yields 2 cups of Pesto

4 cups fresh basil leaves

3-4 garlic cloves, roughly chopped

½ c. pine nuts (I also like to use walnuts or toasted cashews)

½ lemon, juiced

¾ c. shredded parmesan cheese

½ c. extra virgin olive oil

salt and pepper

Girlfriends and Dessert.

It's that time of year when my girlfriends and I get to celebrate a birthday a month for the next couple of months!  We went out for dessert last night to celebrate Tami's birthday {which was in September but this was the first night we could go out}.
 We went to Cafe Terigo on Main Street in Park City for dessert.
We ordered one of every dessert!

Pad Thai.


Pad Thai

4 tablespoons vegetable oil
2 garlic cloves, minced
4 shallots, thinly sliced
8-10 medium sized fresh prawns, cleaned and deveined (or 8 oz. chicken)
2 eggs, lightly beaten
1 package Pad Thai Rice Noodles
1 cup fresh bean sprouts

Heat wok over high heat.  Add 2 tablespoons oil, garlic, shallots, and prawns.  COok until prawns are opaque; set aside.  Add remaining 2 tablespoons oil and 2 eggs, then scramble.  Reduce heat to low; add sauce and noodles.  Toss until well mixed.  Add prawns and bean sprouts.  Toss well.  Garnish with cilantro, peanuts, scallions and lime wedges.

Sauce:
4 tablespoons lime juice
3 tablespoons fish sauce
3 tablespoons sugar
1-2 pinches crushed chilies or pepper flakes

Mix ingredients together to create sauce.

Garnish:
2 tablespoons fresh cilantro, chopped
3 tablespoons roasted peanuts, crushed
3 tablespoons scallions, thinly sliced
1 lime, cut into wedges
