I just found some photos on my camera from the holidays that I wanted to post. This is my little nephew Enoch's first hair cut. We had NO idea how he would react - my brother Ant was holding him - we had all sorts of treats to keep Enoch occupied during the haircut but it turned out that he just sat there completely still (I think his face explains it all).

My girlfriend Tami and I have been trying to meet on Tuesdays to do some fun crafts. Here is what we made today. Happy Birthday banners. I could not figure out how to photograph this project to show how cute it is - at least you get the idea. You could make these banners for any holiday or event.

We finished our prenatal classes last night. Now we know everything there is to know about having a baby! Right?! :)

This is a little late - but I wanted to post some highlights from the holidays. I was trying out a new camera on the family. I have never been good at writing, English or spelling (!) so I would much rather tell my story in pictures.

Over the holidays while everyone was together my youngest brother McKay got his eagle scout award (the last out of 4 boys). Congratulations McKay.

new years breakfast.

New Year’s Breakfast
Simons Family

3 boxes of Jiffy corn bread
1 package of Hormel maple sausage
1 cup milk
3 eggs
¾ cups sugar
1 ½ cans of Apricots (save the juice)


Mix the three boxes of Jiffy, eggs, milk and sugar. Brown the sausage in a fry pan. Alternate putting two apricots and two sausages in the bottom of a 9x13 pan. Pour the corn bread mixture on top. Bake at 350 degrees until golden brown, about 30 minutes.

In a blender mix a can of apricots and the left over juice to make an apricot syrup.
